For it, the authors, both editors at Chocolatier and Pastry Arts and Design magazines, have collected more than 50 recipes celebrating chocolate--the world's favorite flavor, as they dub it. These include formulas for cakes, cookies, mousses, tarts, and candies. If most of the recipes involve multiple preparations, a sufficient number are simple enough to appeal to everyday cooks, and readers with any interest in the subject should enjoy the book's exploration of chocolate history and lore.

Beginning with this investigation, the book then presents information on chocolate making; ingredient, equipment, and technique definitions; tempering instructions; and other chocolate working material. The recipes, organized by chocolate type--white, milk, and dark--follow, most illustrated with color photos; included also are comprehensive notes on chocolate and other suppliers. If the recipe organization is puzzling (few would choose a chocolate recipe based on the type of chocolate it contains) and the writing often infelicitous ("Milk chocolate, America's favorite chocolate delivery system..." is an instance), the recipes are tempting and clearly presented. Among these, Chocolate Hazelnut Brownies with Milk Chocolate Frosting and Black Satin Chocolate Raspberry Cake, for example, have instant appeal. But even simpler recipes don't lack flavor: Chocolate Hazelnut Brownies with Milk Chocolate Frosting is juiced with Frangelico liqueur. There's Flourless Bittersweet Chocolate Cake with Milk Chocolate Drizzle, retro selections, such as Individual Baked Alaskas and the unusual, such as Ganache-Filled Fried Wontons with Ginger Ice Cream and Chocolate Sorbet. A Mixed Bag

One of the authors is the head recipe tester for Chocolatier Magazine, and the recipes in this cookbook are similar to the ones you will find therein; it has the same advantages and drawbacks. Specifically, it is a productive resource for the professional or the veteran amateur pastry chef. The recipes are probably too ambitious and the instructions too vague for the average home cook.

The introductory chapter is a mixed bag. The essays on types of chocolate, tempering, and tools are exemplary. On the other hand, the sections on non-chocolate ingredients and various techniques and procedures (such as whipping egg whites or proper batter folding technique) are virtually absent. It also has the obligatory and disposable information on chocolate history and manufacturing.

Interestingly, the book has three main sections, one each for milk, dark, and white chocolates. Here, you will find recipes mainly for cakes, cookies, and confections. In a rare moment of honesty, the authors admit that milk chocolate has such a weak chocolate flavor that it is easily overwhelmed in a recipe. There are slightly more than 50 recipes, and they are all listed and cross referenced in the table of contents.

The recipes themselves are problematic. The main error here is the listing of ingredients in volume (e.g. cups) with no equivalents given in weight. This is a major problem for professionals who will try to multiply the recipes, and also for any recipe that has flour. They all list prep times, but never the cooling or baking times. Many of the recipes are complicated affairs that have several components. The result is a recipe that takes up several pages, but even so the instructions are quite scant; they are sufficient for professionals, but not detailed enough for the inexperienced. There is no advice on how to coordinate the execution of a complex recipe with several different sub-recipes. Each recipe has a picture, which is a good thing, but the presentation and decorating instructions in the recipes sometimes do not match the food styling in the photos. These problems will not be a hindrance for the experienced, but will be major trouble for the average home cook.

The most interesting feature of this book is the variety of truffle recipes. Each one has detailed instructions from A to Z for using the fancy, plastic truffle molds that can be bought on the internet in a bewildering array of different types and shapes. There is also a recipe for using chocolate transfer sheets.

Very, very good

I have recently received this book and I find it an excellent book. It is not only beautiful (it has lots of spectacular photos) but also its recipes are wery good, and also its explanations of ingredients and techniques. It is true that it is elegant and you can find that many of the recipes are only for special ocasions (however you can adapt them!), but not too sophisticated (as it is Torres' book, which I find extremely sophisticated). I find this book beautiful and useful.

A chocolate lover's dream book...

When even someone whose idea of "difficult" cooking is cake and brownies from a box picks up a cookbook and says "I have *got* to have this book", you know it is a great book.
Granted, this person is a chocoholic, not a reformed cook who will consider tackling these challenging recipes. And the recipes are challenging.
This book does offer some excellent recipes, and we tested quite a few of them with excellent results...but they are very time and labor intensive. The vast majority of the recipes in the book require over an hour of active preparation.
The book is still worth buying however, even if you couldn't possibly imagine taking 4 hours (plus chilling, cooling, etc. time) to make the decadent caramel rum kisses. The very generously sized book is filled with useful information about chocolate, chocolate history, suppliers, and cooking with chocolate. The book is very well written, and while some recipes span over six or more pages, the recipes are written in exquisite detail making it easy for the inexperienced cook to tackle even the most complex of recipes. But the real reason you should buy this book? Definitely the photos. I occasionally use this book as a coffee table book and to quote a guest the photos themselves are "orgasmic". Her word, not mine. They are incredibly styled and just brimming with chocolate. Be careful though, they have been known to launch chocolate cravings of gastronomical proportions.
If you do purchase the book, there are some recipes you *must* try. The Peanut Butter Milk Chocolate Pie is relatively easy to prepare and is by far the best version of this common restaurant staple. If you make only one dessert this year, their Flourless Bittersweet Chocolate Cake with Milk Chocolate Drizzle should definitely be the one. It is incomparable.
Will most people actually use this book? Well, it depends on what you mean by "use". I actually have friends who come over to visit this book...and just happen to see me while they are at it. Just reading the book makes you feel decadent and pampered...like you are eating the best chocolate in the world. Any chocoholic will enjoy this book immensely, probably more than any other book on chocolate on the market. If you want to know how many of the recipes you will use...to be honest, the average cook probably will not use many. There is a lot of useful information and ideas for the average cook, especially when it comes to decorating ideas and techniques that you can apply to many other recipes. You may even be inspired to use some of the unique combinations of ingredients in other recipes, such as white chocolate, citrus juices, and tequila or dark chocolate and ginger. It would take a pretty confident cook or entertainer to try most of the recipes in this book. But it would definitely be worth it!

About the Author
Christiane Sanderson is a lecturer in Psychology at London University, Birkbeck College, and Consultant in the School of Psychology and Therapeutic Studies, University of Surrey, Roehampton. With 15 years' experience working in the child sexual abuse field, she has run workshops for parents, teachers, social workers, nurses, therapists and counsellors to increase knowledge and awareness of CSA. She is the author of Counselling Adult Survivors of Child Sexual Abuse (2nd edition), also published by Jessica Kingsley Publishers.

Let's attempt to understand child abuse

A fascinating book, written by a professional and surely a parent. Eventhough the subject is difficult, this book gives plenty of arguments why it is crucial to reflect afresh on the subject, take a positive pro-active attitude towards prevention and help for victims and abusers. Not a light read by any means, but definetly a must for anyone seriously interested in the welfare and well-being of children within the family, as well as within the community.

About the Author
Reginald H. Garrett was educated in the Baltimore city public schools and at the Johns Hopkins University, where he received his Ph.D. in biology in 1968. Since that time, he has conducted research and taught biochemistry courses at the University of Virginia, where he is currently Professor of Biology. He is the author of numerous papers and review articles on biochemical, genetic, and molecular biological aspects of inorganic nitrogen metabolism. His early research focused on the pathway of nitrate assimilation in filamentous fungi. His investigations contributed substantially to our understanding of the enzymology, genetics, and regulation of this major pathway of biological nitrogen acquisition. More recently, he has collaborated in systems approaches to the metabolic basis of nutrition-related diseases. His research has been supported by grants from the National Institutes of Health, the National Science Foundation, and private industry. A member of the American Society for Biochemistry and Molecular Biology, Garrett is a former Fulbright Scholar, was twice Visiting Scholar at the University of Cambridge, and was Invited Professor at the University of Toulouse, France.

Charles M. Grisham received his B.S. in chemistry from the Illinois Institute of Technology in 1969 and his Ph.D. in chemistry from the University of Minnesota in 1973. Following a postdoctoral appointment at the Institute for Cancer Research in Philadelphia, he became Professor of Chemistry at the University of Virginia, where he teaches biochemistry, introductory chemistry, and physical chemistry. He has authored numerous papers and review articles on active transport of sodium, potassium, and calcium in mammalian systems, on protein kinase C, and on the applications of NMR and EPR spectroscopy to the study of biological systems. His work has been supported by the National Institutes of Health, the National Science Foundation, the Muscular Dystrophy Association of America, the Research Corporation, the American Heart Association and the American Chemical Society. A member of the American Society for Biochemistry and Molecular Biology, Grisham held the Knapp Chair in Chemistry in 1999 at the University of San Diego; was Visiting Scientist at the Aarhus University Institute of Physiology, Aarhus, Denmark, for two years; and received a Research Career Development Award from the National Institutes of Health.

Superb, balanced book.

I took 2 courses in undergraduate biochemistry, and this was the book used. The authors strike a balance between biology (i.e. discussion of regulation and physiology) and chemistry (i.e. reaction mechanisms and structures of proteins). This book is middle-of the line between Voet (hardcore chemistry/structural biology) and Lehninger (physiology/pre-med focus). The illustrations were clear and overall the text was comprehensible. For teaching an undergraduate course in biochemistry, Garrett & Grisham is hard to beat.

A scammed feeling

There are many undesirable issues with this textbook.

First major issue is the fact that it doesn't have example problems that teach the student how to solve problems at the end of the chapters. However, for the price of $45-$100 the student can buy the "solutions manual" which should have already been part of the text. So when purchasing this book, the customer is buying an incomplete textbook.

Second, the examples problems that are present will neglect to explain or show crucial steps in the equations.
Again, more incentive to spend more money on the solutions manual.

Third, issue is that there are typos throughout the book, coincidentally in the example problems and answers to the example problems. There is more confusion and thus incentive to buy the solutions manual. It's very confusing when quantities are mislabled in mili-moles when it should be micro-moles.

Fourth, ball and stick models don't show double and triple bonds in the molecule.

I'm sure they will just make this textbook obsolete with a new edition to correct the typos. Profitable industry where products are not recalled for major mistakes.

In the future, I hope none of my professors will use Cengage textbooks.

Now THIS is what an apocalyptic end-of-the-world thriller OUGHT to be!

Every now and then a novel comes out that tackles the oft-visited 'End Of The World' type premise...Hollywood is no stranger to this arena either. But while novels and movies abound, not many of them really approaches the topic with a vengeance...that is until now. Kudos to Jeremy Robinson for creating not just a terrifying scenario, but doing it with gusto and with such originality.

Crustal Displacement has left the earth in a literal shambles. Warm places are now cold...conversely, cold places are now warm--even hot. One place in particular is the frozen continent of Antarctica--which is frozen no more. With such a global upheaval, you can imagine the catastrophe which has ended the life of millions, and virtually left a large portion of the world virtually uninhabitable. Where do the survivors go now? Good question. Fortunately (or maybe not depending how you look at the storyline...) the continent of Antarctica has thawed and is ready to claim--or so we think.

Getting into the mind of characters is almost a lost art-form in the world of novels these days because so few writers do it well (IMO), but Jeremy Robinson has manufactured fictional people who you grow to care about and worry for during such an incredibly horrific time. I want to do my best to help spread the word to those who are of the mindset that if you want action, you can only read authors like Cussler, Ludlum or Rollins. If you like your action big and your stories to be edge-of-your-seat amazing, you honestly OWE it to yourself to pick up a copy of one of his books. Antarktos Rising is not just another spectacular novel, it's an event worth experiencing and definitely a ride worth taking. I'd tell you more, but that would seriously ruin a chunk of the genuine thrills and surprises that await you. If you think that only the best authors come from well established publishing companies...THINK AGAIN...and then go GET THIS BOOK.

Jeremy Robinson is here to stay.

This is my third Jeremy Robinson novel, and he just keeps getting better.

What I like most about this book is the sheer scope of the story. You start off sitting in a frozen Antarctica with a Dr. and his wife, and the next thing you know the whole continent has shifted, the world is in chaos, billions are dead, many entire contries are just...gone, and the surviving great nations are involved in a race to the center of the last feasible hope for humanity: Antarktos.

The problem is, Antarktos has been used as a Last Great Hope by someone else long before the current cataclysm, and those aho are there...well, they aren't real keen on just handing the continent over to the humans.

The writing is tighter in this novel than his previous two, as well, and Mr. Robinson knows how to keep eyeballs glued to the page. I'll admit that I was very much looking forward to this read. I will also say it lived up to my expectations and even surpassed them a smidge.

It is clear to me that Jeremy Robinson is here to stay.

I do have one gripe about the book, and it's the same problem I had with Raising the Past. Once the story was done, I wanted to read more. I know it's a tad cliche, but that's ok. It's true.

Hey, Jeremy...how about writing a little faster, huh? I'm ready for the next one!

My wife and I have just finished Jeremy Robinson's latest novel and just have to give major kudos where kudos is deserved.

Robinson's 3rd novel is fantastic, totally well driven and starkingly like a modern day Edgar Rice Burroughs filled with a solid adventure rush that rivals anything written in this genre as of late. This writer deserves all of the respect - and more - than publishers and bookstores are unfortunately not giving him. We looked everywhere for this authors books and could not find a one in neither Barnes & Noble or Borders.

But thanks once again to this awesome website we were able to not only discover this gifted writer, but get ahold of his books. This was the one that grabbed our interest the most, thus we read first. And from the get-go, Robinson throws the reader into a firsthand account of the climatic weather changing event that changes the earth forever, plunging it into a reawakening filled with biblical beasts and giant men called Nephilim, all culled magnificently from the Bible by this solid author who spends it into a web of multi-layered storylines that thrill and excite the reader from page 1 to the very end.

If you love authors of such wild adventures, like James Rollins and Brian Keene, or a mixture of the two, and S. M. Stirling and Edgar Rice Burroughs, then you are in for a treat!

From colorful locales to fantastic creatures of myth, science, and biblical, with ever-growing and believable cast of characters, Antarktos Rising will most definately take you on a thrilling high-stakes adventure that will surely keep you up into the wee hours of the night.

We look forward to this other author's works. And especially hope for a sequel to this terrific novel.
